January the 30th 1997 some appraisers of Ancona's style dried cod founded the "Academy of Ancona's style dried cod". The main pourpose of this non profit making association is to safeguard the typicalness of this dish.

Every year in Septembre all the lovers of dried cod from all over Italy meet themselves at the restaurant of Excelsior Hotel La Fonte to celebrate the goodness of the dried cod.
